Boil Chickpeas
When you start to make hummus recipe, the first tip you should keep in mind, to use fully cooked chickpeas. The more chickpeas are mushy the more hummus will turn creamy. Take three cups of chickpeas and boiled them for 30 minutes on medium high heat. If you are using canned chickpeas then I will suggest to simmer them for 10 minutes in hot water. The tenderness of chickpeas is most important thing to make a perfect hummus.
Peel off the Skin
Once the chickpeas are boiled, strain the hot water. Then put the boiled chickpeas in a bowl full of fresh water to peel off their skin. Take a hand full of chickpeas and rub them in your hands to get rid of their skin. Following the same procedure repeat the step with all of the chickpeas.
Add Lemon Juice, Minced Garlic, & Spices
Once the chickpeas are prepared for hummus, lets start making it. Take a food processor and pour lemon juice in it. Then add minced garlic, sumac and salt into the food processor.
Blend Them
Now blend them together on low speed for 30 seconds or until well combined.
Pour Tahini & Blend
Secondly, pour tahini paste into the blender and blend it over medium speed for a minute. Make sure to use good quality organic tahini as the taste of the recipe depends upon the quality of tahini paste.
Add Chickpeas, Olive Oil & Blend
Then add chickpeasand olive oil into the processor and blend them for 5 minutes on medium speed.
Add Ice & Blend
Lastly, while blending the paste for a minute add ice cubes into the processor. Ice will make your hummus silky and smooth. Blend it until the ice complelety melts into the paste.
Dish out & Garnish
Then dish out the hummus in a serving bowl and garnish with coriander leaves, olive oil, and summac. It will go delicious with homemade pita bread.
