Garaetteok or rice cake is a famous Korean dish made from rice flour. The cylindrical-shaped soft, chewy, and bouncy cakes are usually used in a variety of recipes like spicy rice cakes(tteokbokki), rice cake soup(tteokguk), and stir fry chicken(dakgalbi). Directions for Making Rice Flour
Soak Rice In Water
Firstly, take 1 cup of short-grain rice and soak them in water for 12 hours or overnight. If you are soaking rice on summer days then keep them in the refrigerator. Then after 12 hours drain out the water and let them dry completely.
Grind Rice
Secondly, take a food processor and put rice in it. Then grind them to a fine powder. Make sure to grind rice in small batches otherwise, they may stick to the bottom and be difficult to grind.

Prepare Rice Dough
Then take out rice flour in a microwave-safe bowl. Then add salt to the rice, gradually start pouring hot water into the rice flour and keep mixing with a spoon ladle.
Microwave Rice Dough
Secondly, cover the dough bowl with a cling wrap and make sure to leave holes in the wrap. Then microwave the dough for 2-3 minutes.
Pound the Rice Dough
Drop the sesame oil on the cutting board and then put the rice cake dough on it. Then using a pestle pound the dough for 4 to 5 minutes. Once the dough is smooth and elastic stop pounding it.
Roll and Cut the Rice Cake
Finally, using your hands or a rolling pin roll the dough into a cylindrical shape. Then with the help of a knife cut the cake into two halves. The rice cake is ready to serve. Once the cakes are ready cover them with sesame oil to keep them safe from sticking.
