Shish Tawook Ingredients
- Chicken Boneless half kg
- Yogurt 1cup
- Olive Oil 2tbsp
- Tomato Paste 1tbsp
- Garlic Paste 1tbsp
- Lemon Juice 1tbsp
- Paprika 1tsp
- Black Pepper Powder 1tsp
- White Pepper Powder 1tsp
- Sumac Powder 1tsp
- Salt to taste
- Garlic cloves 12
- Egg Whites of 2 large eggs
- Vinegar 1tsp
- Lemon Juice 1tsp
- Tortilla as required
- Onion 1large
- Tomato 1large
- Fresh Coriander half cup
- Iceberg half cup
- Pickled chilies half cup
- Pickled Carrots half cup
- Oil for frying
Instructions for Making Shish Tawook Recipe
1. Cut Chicken Breast in Cubes
Take half kg of boneless chicken, then clean it by washing it with fresh water. Let it dry, and then using a sharp knife cut boneless chicken into cubes or strips. when cutting a chicken keep this in mind cut all pieces in equal size so when frying it will be evenly cooked. If your chicken is not evenly cut, it will not be cooked evenly from all sides.

2. Marination for Shish Tawook
Firstly, in a large bowl add yogurt, tomato paste, lemon juice, garlic paste, paprika powder, black pepper powder, white pepper powder, sumac powder, olive oil, and salt. Then whisk them together to make creamy marination for the chicken. You can enhance the quantity of the ingredients if you want to make more chicken shish tawook wraps.

3. Marinate Chicken for Shish Tawook
Secondly, add the clean chicken cubes in marination which you cut in the first step, using your hands or a spoon mix it well, so each piece of the chicken is well marinated. Make sure to wash your hands and wear transparent gloves if you are marinating chicken with your hands. Then cover the bowl and let the chicken marinate for a maximum of 1 hour.

4. Thread Chicken On Skewers
Now take one marinated chicken piece one by one and put them on wooden skewers, insert at least 6 pieces on each skewer without any gap left between them. each piece should be stuck to the other piece on the skewer. In this way make as many skewers as you can make from half a kg of marinated chicken.

5. Heat Oil and Fry Chicken Skewers
Place a pan on the stove and then light the flame, pour vegetable oil for frying and let it heat up on medium flame for 2 minutes. Once the oil is heated add chicken skewers to the pan for frying. Fry each side of the skewer for 5-6 minutes or until they change color, fry all chicken skewers in this way. Don’t add more than three skewers at a time to the pan.

6. Prepare Garlic Sauce
In a blender add garlic cloves, vinegar, egg whites, lemon juice, and salt. then start blending them. While blending gradually pour cooking oil into a blender to make a creamy and thick garlic sauce. Stop blending when reached desired consistency of the sauce. Pour it out in a bowl and save it for later use.

7. Prepare Salad for Wrap
In another bowl, add chopped onion, chopped tomato, finely chopped fresh coriander, black pepper powder, and salt. toss them together using a spoon so they will well combine together. Now set this bowl aside for later use in chicken tawook wrap.

8. Assembling
Now place a tortilla on a clean surface of the kitchen mat, then using a spoon spread garlic sauce over it, only spread the sauce in the mid of the tortilla. Then place icebergs on the spread sauce, then layer it up with grilled shish tawook. Then on the top of the shish taouk put prepared salad and pickled green chilies and pickled carrots. In the same layering sequence layer all of your tortillas one by one.

9. Fold and Secure the Wrap
Once assembling of the shish tawook wrap is done, fold the wrap from both sides and secure it using a toothpick or food holding pin. then one by one secure all wraps and place them on a tray, delicious and mouth-watering chicken shish tawook wrap is ready to serve and enjoy with family and friends.
